§ 114239 Mobile Food Facility Water Tanks

Key Takeaways

  • •Water tanks in food trucks or stands must be easy to take out so they can be refilled or swapped.
  • •You can only refill water tanks in a clean and approved way, like at a special place called a commissary.
  • •Empty or full water tanks must be stored safely inside the food truck or in a way that keeps them clean.

Example

A food truck owner needs to refill their water tank.

They can’t just fill it up anywhere—they have to go to an approved place, like a commissary, to make sure the water stays clean. If they leave the tank outside or in a dirty spot, it could get contaminated, which is not allowed.
