§ 114217 Nonpermanent Food Facility Water Requirements

Key Takeaways

  • •Food trucks and temporary food stands must have enough clean water for cooking, washing dishes, and handwashing.
  • •They must have at least 5 gallons of water just for handwashing—extra water is needed for everything else.
  • •If they cook a lot of food, they need at least 25 gallons of water. If they only do simple food prep (like heating hot dogs), they need at least 15 gallons.
  • •The water must come out of the sink fast enough—at least 1 gallon per minute.

Example

A taco truck at a fair.

The truck must have 5 gallons of water just for the workers to wash their hands. If they’re cooking meat and washing dishes, they need another 25 gallons for that. The sink must also let water flow out fast enough to clean properly.
