§ 113986 Food Cross-Contamination Prevention

Key Takeaways

  • •Keep raw meat, fish, and eggs away from foods that are ready to eat (like fruits, veggies, or cooked food) to avoid making people sick.
  • •Use separate knives, cutting boards, or store foods in different containers to stop germs from spreading.
  • •Wash and clean food containers before opening them to keep food safe.
  • •Some whole foods (like uncut fruits, nuts, or big pieces of meat) don’t need to be wrapped or covered.

Example

You’re making a chicken sandwich and also cutting up apples for a snack.

You can’t cut the raw chicken and then use the same knife or cutting board for the apples without washing them first. This could make someone sick if germs from the chicken get on the apples.
