§ 112445 Food Lot Identification Requirements

Key Takeaways

  • •Every batch of food stored in a cold place must have a clear label with its lot number.
  • •The lot number on the food must match the records kept at that place.
  • •This helps keep track of food and makes sure it's safe.

Example

A grocery store puts a big box of frozen pizzas in their freezer.

The store must put a clear label on the box with the lot number, like 'Pizza Lot #123', and this number must also be written down in their records. This way, if there's a problem with the pizzas, they can find them easily.
