§ 31501 Licensee Recordkeeping Requirements

• •The boss (called the 'commissioner') decides what records you need and how to keep them.
• •You must keep these records for as long as the boss says, and store them where the boss tells you.

You own a small food truck and have a license to sell food.

The government says you must write down every time you buy ingredients, how much you sell, and keep those notes for 3 years. If you don’t, you could get in trouble.
